pine apple wine

Well, the first brew of pineapple wine is down.

Took 3 ripe pineapples, tasted nice and sweet.
skinned them, cored them, chopped them up stuffed them into a stocking and placed in the fermenter.
Made a solution of about 1Kg sugar and boiling water.
poured over the pineapple.
squashed witha potato masher
then topped up to 5 liters.
checked specific gravity not 1.09 so added a little more disolved sugar
got to 1.09 which I think should be OK.
added 1 crushed campden tablet.
sat overnight then added
1/4 teaspoon tannin
1/2 teaspoon cirtic acid
1/2 teaspoon peptic enzyme.
made a yeast brew up in a cup of warm water, about 1 teaspoon yeast.
let the yeast grow for about 2 hours then chucked into the mix.
Now I'll leave it ferment in the fermenter for a week stirring everyday.
